Grapes are sourced from vineyards with varying soils comprising of shale, quartzite and sandstone, which lends structure to the resulting wine. The vines are cultivated in a sustainable manner and are mostly bush vines or “sur echalas”. The vines are supported by a vertical wooden pole. This system is appropriate for drought resistance and trellised to produce maximum complexity from the complex soils.
The 2015 harvest had the earliest start in decades. Warm weather in August resulted in earlier bud break, after which a warm, dry and windy summer kept vineyard growth under control and accelerated ripening. This handcrafted wine is based on Syrah (88%), with small additions of Grenache (5%), Carignan (4%) and Mourvèdre (3%). Natural fermentation took place in open-top fermenters, followed by maturation in French oak foudres and barrels for a further 10 months.

Components matured separately for six months in small- and large-format barrels before being blended and returned to barrel for a further four or so months. Red and black berries, olive, herbs and spice on the nose while the palate shows plenty of pure fruit, bright acidity and crunchy tannins – most appealing.
