A Cape Red blend of note; full bodied with attractive ripe bery fruit and savoury notes. On the palate it’s got well structured and rounded ripe tannins with a touch of oak spice and vanilla notes.
Platter’s ***(*): Generous fruit, silky texture on 2015 blend of pinotage, shiraz, cab & merlot, with charred oak & vanilla from lengthy stay in barrel.
The four different varieties were vinified separately using different methods to enhance varietal character and optimise tannin extraction and maturation.
Pinotage was fermented whole bunch and some whole berries under partial carbonic maceration with indigenous yeast. Cabernet Sauvignon was fermented in a special Speidel fermenters with indigenous yeast with regular punch down. The Shiraz was fermented with the stems, whole bunch, in 1,000lit open fermenters with minimum punch down. Merlot was partially crushed for
better colour and tannin extraction. After fermentation all four varieties were pressed to barriques seprately for malolactic fermentation, and then matured in 2nd and 3rd fill barriques for 20 months.
